Anyone that know me well knows that I'm not a salad person. I'm not a big fan of lettuce or salad dressing (yeah I know that makes me insane), so this recipe contains neither. It's also so easy that a kid under ten could throw it together in five minutes. The point is, it tastes frickin great.
Things you'll need:
- A large handful of baby spinach
- Approximately 175g of bocconcini cheese (I cut mine into quarters)
- Approximately 200g of whatever red tomatoes you'd like (although I do prefer smaller varieties). I used truss tomatoes, also cut into quarters.
- Two heaped teaspoons of basil pesto (it really depends on the strength and how much you like pesto. Experiment with it!)
After you've chopped everything up to your satisfaction, throw everything in a bowl and toss it around a little, then you're ready to eat it!
It doesn't matter how much of everything you add, it's not rocket science. You can add more or less of whatever you want according to your tastes. I eat this salad as a meal, so you can also use less ingredients to make a smaller portion, or go big and make a giant one.
